The secret to velvety vegetable puree soup lies in the vegetables' own flavor, and freeze-dried vegetables provide so much flavor that no additional spices are needed. Vegetable puree soup is prepared very easily and quickly. Aura blue cheese adds saltiness and creaminess to the soup. If you wish, you can omit the Aura blue cheese, making the soup very low in calories, or you can replace the Aura blue cheese with another cheese.
Roast the chopped vegetables at approx. 200 degrees for 20-30 minutes. Put the vegetables and vegetable broth into a blender and blend until smooth. Add freeze-dried organic parsnip and freeze-dried organic kale crumble. Crumble the freeze-dried root vegetables before adding them to the puree. Add Aura blue cheese to your taste. Enjoy, for example, with archipelago bread.

Freeze-dried kale
Freeze-dried parsnip
1 pc bell pepper
1 pc onion
3 pcs carrots
small piece of leek
300-400 g tomatoes
approx. 6 dl vegetable broth (boiling water and one vegetable broth cube)
piece of Aura blue cheese
