The secret to easy potato salad is a cream-based dressing, which is perfect as a base for potato salad. It also works independently as a dip or sauce to accompany fish dishes and is easy to prepare.

You can prepare the potato salad the day before serving.

Instructions:

Boil, peel and chop 6-8 potatoes and let them cool. Alternatively, you can boil washed summer potatoes with their skins on and chop them only after they have cooled.

Prepare the leek-cream dressing in a salad bowl by combining all the ingredients together. Finally, add the boiled and cooled potatoes with the dressing and mix. You can decorate the salad with fresh dill and lemon wedges. You can find the recipe video here.

Leek-cream dressing

Combine all the ingredients for the leek and cream sauce in a salad bowl.

2 dl Cream sauce

1 dl chopped pickles
1/2 dl freeze-dried organic kale shreds
1 dl freeze-dried organic leek slices
1-2 capers
ground black pepper
about 1 tsp salt
1 tsp dried dill
½ tsp garlic powder
2 tsp olive oil
½ dl chopped fresh dill
