Crispy Parsnip Granola

What if you spiced up your basic muesli recipe with a touch of organic parsnip? In this excellent three-grain recipe, parsnip provides sweetness along with honey.

You will need:
4 dl oat flakes
3 dl barley flakes
1/2 dl oat bran
1/2 dl wheat bran
1 dl sunflower seeds or a salad seed mix that includes, for example, pumpkin seeds
A handful (approx. 1 dl) of freeze-dried parsnip
3 tbsp honey
3 tbsp oil

Mix the dry ingredients in a bowl. Crush the freeze-dried parsnip chips into the mixture. Mix the honey with the oil and pour the mixture over the dry ingredients. Mix the ingredients evenly and spread them on a baking sheet lined with baking paper. Roast in the oven for approx. 15 minutes at 160 degrees Celsius. Stir the granola occasionally with a spatula to ensure even roasting and prevent burning.
Serve with yogurt, quark, or as a dessert, for example!
